Philly Cheesesteak Bowls – Easy 30-Minute Dinner

These Philly Cheesesteak Bowls have all the savory, cheesy flavor of a classic cheesesteak without the bread. Tender strips of beef are cooked with caramelized onions and bell peppers, then topped with melted provolone for an easy skillet dinner that comes together in about 30 minutes.
They’re especially good for busy weeknights because everything cooks in one pan, and you can serve them exactly as they are or add rice, roasted potatoes, or cauliflower rice if you want a heartier meal.

Ingredients
For the Philly Cheesesteak Bowls
- 1 1/2 pounds sirloin steak or ribeye, thinly sliced
- 1 tablespoon olive oil, divided
- 1 tablespoon butter
- 1 large yellow onion, thinly sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt, or to taste
- 1/4 teaspoon black pepper
- 6 slices provolone cheese
- 1 tablespoon chopped fresh parsley, optional
Instructions
1. Prepare the steak
First, pat the steak dry with paper towels and slice it thinly against the grain. Season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
For easier slicing, place the steak in the freezer for about 20 minutes beforehand. It should be firm but not frozen solid.
2. Cook the vegetables
Next, heat 1/2 tablespoon olive oil and the butter in a large skillet over medium-high heat.
Add the sliced onion and bell peppers. Cook for about 6–8 minutes, stirring occasionally, until the vegetables are tender and beginning to caramelize.
Add the garlic and cook for another 30 seconds.
Transfer the vegetables to a plate and set aside.
3. Sear the steak
Increase the heat to high and add the remaining 1/2 tablespoon olive oil.
Once the skillet is hot, add the steak in a single layer. If necessary, cook it in two batches so the meat sears instead of steaming.
Cook for about 2–3 minutes per side, or until browned and cooked to your preferred doneness.
4. Combine everything
Reduce the heat to medium. Return the peppers and onions to the skillet.
Add the Worcestershire sauce and Italian seasoning. Toss everything together and cook for another 1–2 minutes so the flavors can combine.
Taste and adjust the salt and pepper if needed.
5. Add the provolone
Arrange the provolone slices over the steak and vegetables.
Cover the skillet for 1–2 minutes, just until the cheese is melted and gooey.
Finally, sprinkle with fresh parsley if desired.
6. Assemble the bowls
Divide the cheesy steak, peppers, and onions among four bowls and serve immediately.
For a lower-carb meal, enjoy the Philly Cheesesteak Bowls as-is. Alternatively, serve them over cauliflower rice, regular rice, roasted potatoes, or another favorite base.
Notes
Best beef: Ribeye gives you the richest flavor, while sirloin is a leaner and usually more affordable option.
Slice against the grain: This is one of the most important steps for keeping the steak tender.
Don’t overcrowd the skillet: Cooking the beef in batches gives it a better sear.
Cheese options: Provolone is my first choice, but white American, mozzarella, or pepper jack can also work.
Meal prep: Store the steak and vegetables in an airtight container in the refrigerator for up to 3–4 days. Reheat gently so the beef doesn’t become tough.
What to Serve With Philly Cheesesteak Bowls
You can serve these bowls by themselves for a lower-carb dinner, or pair them with:
- cauliflower rice
- white or brown rice
- roasted potatoes
- French fries
- a simple green salad
- roasted vegetables
Variations
Mushroom Philly Cheesesteak Bowls: Add sliced mushrooms with the peppers and onions.
Spicy version: Add sliced jalapeños or crushed red pepper flakes.
Extra cheesy: Add an additional layer of provolone just before serving.
Chicken version: Substitute thinly sliced chicken breast or chicken thighs for the beef.
Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
For the best texture, reheat the Philly Cheesesteak Bowls in a skillet over medium-low heat until warmed through. You can also microwave individual portions in 30-second intervals.
